Carol Silkes

Chef Carol Ann Silkes, Ph.D., is an Associate Professor in the Kemmons Wilson School of Hospitality, Resort, and Sport Management at the University of Memphis. Dr. Silkes is classically trained in culinary arts and is recognized as a Certified Executive Chef by the American Culinary Federation. Hailing from Chicago, Chef Carol Silkes has traveled the world perfecting her culinary craft as an ambassador of good tastes! Dr. Silkes has melded her passion for exceptional food, expertise in culinary arts, and love of Memphis into a home-grown culinary tourism experience. www.tastinroundtown.com is a food tour company grounded in her dissertation research. Carol’s industry experience includes the Hyatt Corporation, independent restaurants, and Chef John Folse and Company. Carol spent twelve years in South Louisiana exploring Cajun and Creole cuisine. Her experiences include corporate chef, fine dining and catering, product research and development, wholesale food production, production of a weekly radio cooking show, cooking demonstrations and classes for television and live audiences, food styling, and cookbook editing.

Lance Silkes

Lance A. Silkes is a Renaissance Man. He is a lover of art, history, automobiles, music, theater, his daughter Katie, and good food! Professionally he has traveled an interesting road; Doctor of Optometry, entrepreneur, restaurant owner, political activist, restaurant concept developer, and Indy’s ‘Chauffeur to the Stars’. Lance has personally explored every Barbeque restaurant in a 1000 mile radius of Memphis to build his story of BBQ to accompany his tour. Now his energy is helping to move Tastin’ ‘round Town (www.tastinroundtown.com) forward. His one personal quest is to find the best Vietnamese Pho in the South. Anybody know where he can find it? Drs. Lance and Carol Silkes are proud to call Memphis their home. They are proud to say they rescued the iconic Front Street Delicatessen in downtown Memphis by purchasing it from the estate of Lee Busby. They love to share their enthusiasm for food, culture and friendship with everyone they meet. They have a beautiful daughter, Katie Dora, a self-rescued dog, Brian and three pet chickens, Fiona, Fanny, and Steve.
